Clean Dessert: Roasted Plums + Ricotta

Roasted plums topped w/ Lemon Ricotta + Walnuts

My boyfriend will vouch 1 million percent... I can't live without dessert. He actually claims he eats more [dessert] since we started dating thanks to me. LOL. One night I cooked dinner for him and Anthony {bestie} and couldn't resist whipping up something sweet, fresh and clean.

In my my Clean Slate: A Cookbook and Guide, is where I found the roasted plum recipe. Knowing Anthony isn't much of a yogurt lover, I wanted to skip all together or replace the yogurt part of the recipe and add my own twist! If you want to recipe, click HERE to order your book! I can't say it enough, it's such a good read and perfect guide to cleansing your body! You WILL learn so much and feel amazing.

Basically, you use 1/2 a pound of fresh red plums (peaches or figs would be great as well, can't wait to try), pitted and halved, some fresh squeezed OJ, and organic honey. Bake in oven. Then the lemon ricotta part was all me.

Lemon Ricotta (4 servings per Roasted Plum dish)

  • 1/2 cup Fresh, Organic Ricotta Cheese
  • 1/4 cup of Organic, European Style, Non-fat Yogurt - Plain
  • 1 large lemon
  • 1/2 teaspoon vanilla extract
  • 1/3 cup chopped raw walnuts (any nuts you like)

Combine yogurt and ricotta cheese. Zest 1 lemon into the mix. Add 1/2 of the lemons fresh squeezed juice and vanilla extract. Stir until completely combined. If you would like this a bit sweeter, I would had at 1/2 a tbsp of organic honey. Refrigerate for at least 20 minutes before serving to bring back to its thick consistency. Plate over your roasted plums, and top with walnuts and more lemon zest. Enjoy!!

Enjoy this over granola, your roasted plums, pancakes, waffles, or chia seed pudding!

If you try this, please let me know how it goes!
